Chocolate Chip Cookie Dough Truffles


For Cookie Dough

1 ⅔ cups blanched almond flour

⅓ cup coconut oil

⅓ cup raw honey

1 tsp vanilla extract

½ cup mini chocolate chips

For Chocolate

⅔ cup melted coconut oil 

⅔ cup unsweetened cocoa powder

⅓ cup pure maple syrup

½ tsp vanilla extract

⅛ tsp coarse  sea salt (optional)


For Cookie Dough 

In a bowl, combine all ingredients except the chocolate chips, mix until well combined.  After a soft dough forms, add the chocolate chips. Place dough in the fridge for at least 30 minutes.   

For Chocolate 

In a small saucepan over low heat, whisk together the melted coconut oil and cocoa powder and the maple syrup.  Note: if your cocoa powder seems lumpy, try sifting it first before adding to the saucepan. Whisk until a smooth shiny consistency forms.  

Remove from heat and add vanilla and salt. Let the mixture sit for 10 minutes.  It will become a little thicker and perfect for dipping.

Dipping Truffles

Line a baking sheet with parchment paper. Form dough into 1 in balls and drop into the chocolate sauce. Use a spoon or fork to roll the dough around until completely covered.  Place on the cookie sheet and do the same to all of the dough. Let cool and chocolate will harden. Place in the fridge and Enjoy!

Ready in 35 minutes
