Sausage & Hash Brown Mini-Frittatas
This recipe has been in my family for a long time. My sister Jennifer first introduced it to us years ago and it has continued to be a go to breakfast. It is not dairy-free. It is not carb-free. I cook for 2 very hungry growing boys (ages 7 & 10) and carb free isn’t a part of our language. You can however make it gluten-free (my sister has Celiac and this is one of her go to breakfast recipes that the entire family can enjoy)! I encourage you to double or triple the recipe because these are not only delicious but they freeze & reheat really well! So, get to work – mix up a batch, it will only take you 45 minutesISH, and dig in!
The KEY PLAYERS…
1 lb sausage – could use turkey sausage – I recommend medium or spicy!
1 large onion chopped – this can be optional. I often leave the onion out if I am taking this to someone for dinner especially if its a friend who just had a baby 😉
2 Cups frozen hash browns, thawed
1 Cup shredded cheese
8 eggs, slightly beaten
1 Cup Ranch – I like the greek ranch dressing when I am in a pinch, but I have made this homemade ranch
recipe before & its delicious!
1/2 Cup milk
Salsa – optional as a garnish
HERE’S THE PLAN…
Preheat Oven to 350. Spray a muffin pan (when my kids were little I used a mini muffin pan…we have graduate to a regular muffin pan, but mini muffin pans work great too!) really well with cooking spray.
In a large skillet sauce the sausage and onion until cooked thoroughly.
Drain the sausage & let it cool.
Transfer sausage & onion mixture to a large bowl and add hash browns and cheese. Toss to mix.
**Recipe can be made ahead until this point.
Add the eggs, dressing and milk. Stir well.
Spoon the mixture into the greased muffin pans, filling them half way.
Bake about 20 minutes.
Serve warm – with or without salsa.
Makes 12 regular sized muffins.
Like I said before, I like to make a double or triple batch, then I freeze them in ziplock freezer bags of 6. When the boys want this for breakfast (or sometimes dinner) we defrost for 45ISH seconds then warm-up for 1 minuteISH…and enjoy! Hope you like them!
